If a recipe specifys red pepper (cayenne) would it be okay to use a spice called red pepper but excludes the word cayenne from its label?

as far as i know, ground red pepper IS cayenne pepper. They are one in the same, so no problem.

How is is that Cayenne has many curative qualities but normal Asian dried chili powder does not? I know that capsaicin is one of the the healing chemicals but it doesn’t seem to follow that the greater the capsaicin content the greater the healing power??

I want to make my own Cayenne Pepper spice. It is getting close to the end of the growing season where I live, and there are a lot of beautiful green chilies still on my plants. I’m wondering is if it is ok to use some of the cayennes before they get to the bright red stage. Can I dry some of the green ones and grind them along with the red? I hate to waste the green ones!

You can harvest them and allow them to change colour off the veins/plants, peppers will go red once harvested, left on the veins/plants they just grow more, I sun ripen mine, string them up and set them in a sunny area or in the house with a window that gets full sun, I sometimes buy a few peppers like ancho, poblano and jalapeno and set 2-3 on the window sill, in time they go from green to red, I dry them completely, even have smoked them on my portable electric BBQ, just added a piece of hickory wood an allow it to smoulder.

You can make a green hot sauce like the green tabasco type, it is not as pungent of hot, but is an alternative to the red, I also pickled fresh green finger peppers for eating or using in dressing or curry’s.
